Doc’s Black Bean Burger

I am always in pursuit of the best burger and I am going to the other side for this burger. Yes, I’m are going meatless!
Veggie burgers are getting more and more popular so I had to try to make a flavorful veggie burger. It will never be like a burger with meat but it is pretty good considering it is meatless.

Makes 4 burgers

Ingredients
1 lbs of black beans (or two 15 oz cans of black beans)
1 green bell pepper, diced fine
1 red onion, diced fine
1/2 Jalapeno, diced fine
2 gloves of garlic, minced
2 large egg, beaten
1 1/2 cup of Panko breadcrumbs (or regular)
4 slices of cheese (your choice)
Spiced mayo
Ketchup
4 Brioche buns
Oil

Instructions

  • Prepare beans according to the instructions on the package. Let cool completely.
  • In a bowl, mash the beans with a fork until it is like a paste. Add diced peppers, onions, jalapeno and garlic. Add beaten eggs and mix in the panko crumbs and stir until completely mixed.
  • Form four patties 3/4 inch thick. Cook on medium high in a nonstick skillet for 4-5 minutes on each side. When you flip the burger over the first time add the cheese and cook until finished. Cover the burgers with foil the last 3 minutes to allow the cheese to melt.

Serve on buns with your favorite condiments and sweet potato fries. Enjoy.
