Doc’s Spiced Mayonnaise

Homemade mayo is absolutely the best mayo you can get.

I often make some additional spicy mayo’s based on the basic recipe for my burgers. Just use your imagination and you can make some great mayos. I have created a few example for you here.

Some mayos are excellent for fish burgers, like salmon or tuna burgers. I like to add Wasabi to the mayo for fish burgers. I use leftover Wasabi from Sushi or you can purchase Wasabi powder at the grocery store and make it yourself. If you can get it fresh you are in luck and should of course use that.

You can also use BBQ Sauce to make the mayo more smoky and sweeter. Just use your favorite sauce and add a couple of tablespoons of it.

If you like a real hot mayo, I suggest you use finely diced chipotle. Chipotle is a smoked jalapeno and adds a deep smoky flavor to the mayo. But be careful! The peppers are hot, so only add a little at a time until desired taste is acquired.

Instructions

Make Doc’s Basic Mayonnaise

Wasabi Mayo:

Mix 1-2 tablespoon of wasabi into 1 cup of mayo and whip it for 30 seconds or until completely incorporated. The mayo turn light green when it is done.

BBQ Mayo:

Mix 2 tablespoons of you favorite BBQ sauce into 1 cup of mayo and whip for 30 seconds. Mayo turns light brown when it is done.

Chipotle Mayo:

Take 1-2 peppers out of the sauce and chop it finely. It is okay for some of the sauce to be mixed in with the pepper. Add 1 tablespoon to 1 cup of mayo and whip for 30 seconds. The mayo turns light brown but with dark spots (pepper).

Garlicky Mayo:

Mix 1-2 cloves of minced garlic into mayo. Mix for 30 seconds. This mayo is great for sweet potato fries.
