Double Breakfast Burger

This is one of my favorite breakfast burgers. What makes it a breakfast burger? Bacon and eggs! This is a double burger so it is for a big breakfast or dinner.

Makes 2 large burgers

Ingredients

1.25 lbs (20 oz) of ground chuck (80% lean)
6 slices smoked ham, cooked.
8 slices of center cut bacon
4 slices of American cheese (or your own choice)
2 eggs
Pickles
Lettuce
2 tomatoes, sliced
Ketchup
Salt and pepper to taste
2 Brioche buns

Instructions

  • Cook bacon to your taste. Set aside
  • Form 4 patties each 5 oz. Make them thin to fit the large bun.
  • In the bacon fat cook the burgers 1-2 minutes on each side for medium. Once you flip them place cheese on patty to cook with burger so they melt. Place first patty on plate, place 2 slices of cooked bacon on top, place next patty on top and top with two more slices of bacon. Place smoked ham on top. Repeat for next burger also. Cover with aluminum foil and set aside.
  • Fry two eggs to taste.
  • Cut buns and place face down in pan and heat on high heat for 1 minute until golden brown.

Now it is time to assemble:

  • Place lettuce on bun, add the double patty with bacon, add pickles and tomatoes, add fried egg. Add ketchup to top bun and place in top.
