This sauce is a thick and tangy sauce. You can adjust the sweetness using the technique I mention in the instrcutions.
The base of any BBQ sauce is ketchup. I made my own ketchup for this recipe but if you want to save time just use a store bought quality. I also add chipotle chile to add some smokiness and spice. You can adjust the amount of chipotle if you think it needs to be more or less hot.
Makes 2 cups
Ingredients
2 cups of ketchup
5 cloves of garlic, smashed
2 tbsp Dijon mustard
2 tbsp vinegar
2 tbsp Worcestershire sauce
3-4 chipotle chile in adobe, finely chopped
2 tbsp smoked paprika
2 tbsp chili powder
4 tbsp dark brown sugar
2 tbsp honey
2 tbsp molasses
Instructions
- Add everything to a saucepan and heat over medium heat
- Cook, stirring occasionally for 15-20 minutes or until thickened
- Taste the sauce. If you need is sweeter add 1 tsp more brown sugar to the sauce. If you want it less sweet, add 1 tsp vinegar to the sauce. Continue until desired taste
- Pour into a bowl or glass and let cool
The sauce keeps for a couple of weeks in the refrigerator.
