Homemade pickles

In my opinion all burgers should have pickles as a topping. I prefer to make my pickles at home because I am not too happy with the store bought quality. Also they add all kinds of chemicals to the pickle sauce and I really dislike that.

I prefer to pickle larger cucumbers like English or Mexican cucumbers. I cut them thick like 1/8″ (3 mm), but it is of course entirely up to you how thick you cut them.
If you prefer the smaller pickles you can buy them and just pickle them whole.

It takes 30 minutes or so to complete this recipe and I promise you that you get the best tasting pickles you’ve ever had.

Ingredients

3-4 large English cucumbers
4 cups of white vinegar
2 cups of water
1 lbs of regular sugar
2 bay leaves
30 whole black peppercorns

Instructions

Simple pickle sauce

  • Mix vinegar, water, sugar, bay leaves and peppercorn in a pot and bring to a boil.
  • Stir the pot a few times while it is heating to make sure the sugar is completely dissolved. Once the sauce boils turn off the heat and let cool.

Cut cucumbers

  • While the pickle sauce is heating, cut the cucumbers to desired thickness (I prefer 1/8″ or 3 mm). You can use a food processor or mandoline to cut them if you like. I prefer to cut them by hand.

Start the pickle

  • Put all cucumbers in a tall pickling jar with an airtight lid. Cover the cucumbers with the pickle sauce while it is still warm. Be careful when pouring the sauce if it’s hot.
  • If you cut the cucumbers thick like I do, I usually add the sauce just after it boils, to sterilize the jar and cook the cucumbers just a little bit. If you cut them very thin, you want to wait adding the sauce until it is completely cooled or the residual heat will cook the pickles and make them too soft.
  • Seal the pickle jar and refrigerate for a few days before you start eating the pickles.

The pickles will last 4 week in the refrigerator.


Tip: If you like your pickles spicy just add your favorite spices or hot sauce to the pickle sauce. You can make these pickles in so many variations so just be creative.
