Are you a little health conscious? Then this burger is for you. If not, it is still for you!
Instead of bacon I am using pastrami and cook it like it was bacon. I also use some BBQ pulled pork as the base of the burger to add some additional smokiness to the burger.
This burger is Memphis style, which mean that it has coleslaw as the main green ingredient.
Serves 4
Ingredients
2 lbs of ground chuck
12 oz of BBQ pulled pork
16 oz of coleslaw
4 slices of American cheese
8 slices of pastrami (preferably a little fatty)
4 brioche buns, toasted
BBQ sauce of your choice
Oil
Instructions
- Shape 4 patties by following these instructions
- Heat a heavy cast iron pan over high heat
- Add oil
- When oil is shimmering add the pastrami and cook for 1-2 minutes on each side until crisp
- Take pastrami off the pan and place on baking sheets lined with paper towel
- Using the same pan cook the hamburgers 3 minutes on each side. When you flip them the first time place cheese on top and cover with aluminum foil
- To assemble the burgers, place BBQ pork on bottom bun and add BBQ sauce. Place patty with cheese and two pastrami slices on top. Finally top of with coleslaw and top bun
Serve right away with tater tots or sweet potato fries.
