Recipe: Kalkalycke Patty Melt Burger

It is time for me to share a great burger recipe with all of you.

If you like burger, bacon and cheese you won’t go wrong with this burger.

The basic concept is to make a burger using grilled cheese sandwiches as buns. When I was a kid I spent a lot of my summers at my Grand Parents Swedish summer residence called Kalkalycke and every time we arrived there we would have grilled cheese and ham sandwiches. I have taken the concept a bit further and added bacon and more cheese to make this a wholesome treat for burger bacon and cheese lovers.

Makes 2 huge (1 lbs) patty melts

Ingredients

2 lbs of Angus ground chuck (80%-20%)
12 slices of white bread
8-12 slices of American or Cheddar cheese
12 slices of center cut bacon
4-8 slices of tomatoes
Pickled cucumbers
Yellow mustard
Ketchup
Salt and pepper

Procedure:

1. Heat a cast iron skillet and cook the bacon to desired crispiness. I make them a little more crisp than normal for this burger because it later has to cook inside the sandwiches and that softens them up a little.

Prepare with cheese and bacon

2. Please 1-2 slices of cheese (depending on how cheesy you want your burger) on 6 slices of the sandwich breads. Place 2 slices of bacon in a cross on each slice of bread. Close the sandwich with the remaining bread slices.

3. Make 4 1/2 lbs patties and season with salt and pepper on both sides. Shape them square to fit on the bread. Heat a cast iron skillet on high heat.

4. While the skillet is being heated place the sandwiches in a panini press (on high heat). Watch for doneness. The sandwiches should be medium dark brown when done (and cheese is oozing out of them, yum).

5. Cook the 4 burgers to desired doneness. I prefer them medium, 3 minutes on each side. Once you turn them add 1-2 slices of cheese and cook them till done.

6. Now it is time to assemble the burgers. Take one cheese sandwich as the bottom. Add mustard and ketchup to taste. Add one patty with cheese and tomatoes and cucumbers. Now add the next cheese sandwich. If you are a sissy this is where the sandwich is done, but if you go for the full 2 lbs experience continue to add the next patty with cheese, tomatoes and cucumber and finally add the third cheese sandwich as the top.

@andjoh If you didn’t add the second burger it is much easier to eat. This one just looks impressive!
